The southeastern Iranian province of Kerman accounts for over half of Irans pistachio production. The cities of Sirjan and Rafsanjan are popular pistachio producers in Kerman Province.

Other Iranian provinces such as Yazd, Fars, Semnan, Sistan and Baluchestan, Qazvin, Isfahan and Qom are also well known for the production of pistachios.

Pistachio nuts are intertwined with Iranian culture, traditions and rituals.

Persian food, dishes and sweets are also decorated with pistachio, for instance Gaz (an Iranian nougat), Sohan (a Persian kind of candy) and ice cream contain this nut.

Persian pistachios come in different varieties which represent a region, shape or quality type. Each variety has its own different properties and flavor. To name a few:  

● Akbari (Persian long pistachio): It is the largest type in Iran with almond shape. Due to its unique taste and texture, Akbari is the most expensive type of pistachio.

● Kalleh Qouchi (Persian jumbo pistachio): This type of pistachio is easily recognizable because of its shape which is a bit fat and big.

● Fandoqi (Persian round pistachios): This is the most widely available pistachio with a round shape and a very good taste.

● Green kernel pistachios: This type of pistachio comes in green color which is commonly used to color and flavor ice cream, chocolate or cake. Kernel pistachios are also divided into different categories.

Those who want to take pistachio to their home as a souvenir can shop high-quality Iranian pistachio from dried fruits and nut stores. In Iran, there are also confectionaries selling high-quality and fine nuts.
